1 pound ground turkey
2 tablespoons SOOC Chipotle olive oil
1-2 sweet potatoes, peeled and cubed
1 avocado
1 can of black beans, drained and rinsed
1 cup Salsa
4-6 Scallions, chopped
Shredded cheddar and sour cream to top
Heat oven to 400 degrees. Cook ground turkey, drain, and set aside.
Grab a parchment lined baking sheet and toss sweet potato cubes with the olive oil. Bake for 20-25 minutes or until cooked.
Assemble bowls by putting ground turkey on the bottom and then covering with black beans, sweet potatoes, salsa, avocado, shredded cheddar, sour cream and scallions.
