Autumn may officially be here, and there will be no shortage of cozy meals in months to come, but Vermont has seen a gorgeous stretch of blue sky days that have helped summer treats hang on for a bit. So while eight berries will never constitute a ‘fall harvest’, when the little plot of raspberry bushes we inherited from the prior owners is still serving up a few treasures this time of year I had to make the most of it.
I’m sure I’m not the only one that struggles with eating healthy, and I’ve learned over the years that I do better when I have some quick and easy go-tos so that I spend less time actually thinking about food. So how do you turn eight berries into something indulgent on a Wednesday morning? You take a bowl of skyr, sprinkle with flaxseed meal, add those berries, and then drizzle blood orange olive oil over it. And then you stand at your kitchen counter, take a bite, and embrace the feeling that it was prepared especially for you by some spa employee who must have just scurried off to prep your afternoon of restorative activities. Maybe that’s just me? But it really is that good - the citrus from the oil just takes it to a completely different level.
Skyr is an Icelandic yogurt that is high in protein and low in carbs, and while I’ve been on a kick with the vanilla & cinnamon flavor lately, the plain version is a perfect blank breakfast canvas and a great source of calcium and probiotics that support gut health. Flaxseed is an easy way to add fiber and omega-3 fatty acids, berries contain powerful antioxidants and vitamin C, and Saratoga’s olive oil is also full of antioxidants as well as heart healthy fats associated with health benefits including a lower risk of heart disease and protection against cancer. Altogether you’ve got a healthy and ridiculously delicious combo that you’d be remiss not to try, and the fact that it can be assembled in less than a minute (berry picking notwithstanding) means you’ve also got no excuse!
