Pumpkin Olive Oil Cake

Pumpkin is a staple flavor of the Fall season. We are combining our Saratoga Milanese Gremolata Olive Oil, pumpkin, and fall spices to create something wonderful! This pumpkin olive oil cake can be served as dessert, but also would make a great sweet breakfast option!

Products used: Milanese Gremolata Olive Oil


1 cup All Purpose Flour
1 tsp Baking Powder
½ tsp Baking Soda
1 tsp Cinnamon
1 ¼ tsp Pumpkin Pie Spice
½ tsp Salt
½ cup Sugar
¼ cup Brown Sugar, packed
1 cup Pumpkin Puree
½ cup SOOC Milanese Gremolata Olive Oil
2 Eggs
1 tsp Vanilla Extract


Grease a loaf pan. Set aside. Preheat oven to 350 degrees.

Combine the dry ingredients in a bowl.

In a separate mixing bowl, combine the sugars, olive oil, and pumpkin puree. Whisk until combined. Add eggs one at a time and then add the vanilla extract.

Sift the dry ingredients into the wet ingredients. Fold the ingredients together with a rubber spatula. Pour batter into the greased loaf pan.

Bake for 40 – 50 minutes in the oven until done.

Dust the cake with powdered sugar and enjoy!
