Unstuffed Cabbage Soup

If you love traditional cabbage rolls but don’t have the time (or patience!) to roll each one, this unstuffed cabbage roll soup is the perfect solution. It has all the cozy, comforting flavors of the classic dish, but in an easy, one-pot meal that’s lighter and ready in under an hour. Using ground turkey keeps it lean while still packing plenty of protein.

This recipe is perfect for meal prep, family dinners, or when you want something hearty without spending hours in the kitchen. Plus, it’s a great way to sneak in extra veggies!

Ingredients

1 pound ground turkey
1 tablespoon SOOC Chipolte Olive Oil
1 onion, diced
2 tablespoons garlic, minced
2 cups carrots, peeled and chopped
2 cups celery, chopped
½ a head of cabbage, chopped
8 cups vegetable or chicken broth
16 ounces of crushed tomatoes
2 cups uncooked white rice
1 tablespoon Worchester sauce
Salt and pepper

Directions

In a large pot, heat over medium heat high heat. Add turkey and cook, breaking apart, until no longer pink. Drain and set aside.

In same pan heat olive oil and add onion and garlic and cook for 5-7 minutes. Add in the carrots and celery and cook for another 5-7 minutes.

Add in the turkey, cabbage and crushed tomatoes followed by the broth, rice, and Worchester sauce. Bring to a boil and cook until rice is cooked through. Serve hot.
