One Pot Turkey, Kale, Cannellini Bean, and Leek Soup

Ingredients

4 tablespoons SOOC Leek Olive Oil
1 tablespoon SOOC Sicilian Lemon Balsamic Vinegar
16 ounces of ground turkey
2 medium leeks, chopped, white and light green parts only
3-4 stalks of celery, chopped
6 cups kale, chopped
1 can cannellini beans, drained and rinsed
1 tablespoon garlic, minced
6-8 cups chicken or veggie broth
salt and pepper

Directions

Grab a pot and add 2 tablespoons olive oil and ground turkey. Sauté over medium to high heat until turkey is starting to brown. Drain any excess fat from pot.

Add the remainder of the olive oil, balsamic, garlic, leeks, celery, and kale and cook for another few minutes.

Add in your cannellini beans, ground turkey, salt, pepper, and broth and bring to a simmer. Add more broth if needed. Serve hot.
