Pizza Topping Salad

This started as a “what do I have in the fridge?” situation and turned into one of my favorite things to throw on pizza.

Squash, eggplant, zucchini, corn, feta, olive oil, hot honey balsamic, and olive oil. That’s basically it.

The vegetables get roasted until they’re caramelized and a little crispy, then tossed with the sweet, spicy, tangy combination of hot honey balsamic and olive oil.

Very healthy-ish. Very easy. Very much my kind of cooking.

Ingredients

4 tablespoons SOOC Pizza Olive Oil
2 tablespoons SOOC Hot Pepper Honey Balsamic Vinegar
1 zucchini, chopped
1 yellow squash, chopped
1 eggplant, peeled and chopped
1-2 ears of corn, kernels removed
1 block feta, crumbled
salt and pepper

Directions

Grab a parchment lined baking sheet and heat oven to 400 degrees. Add the chopped vegetables onto the pan and toss with SOOC Pizza olive oil, salt and pepper. Toss everything together.

Roast vegetables for 20-25 minutes and transfer the vegetables to a bowl and toss with SOOC hot pepper honey balsamic vinegar. Sprinkle with feta and serve right away or chill first and serve cold.
