Butternut Squash "Sauce" Pizza with Broccolini, Red Onion & Mozzarella

This is one of those pizzas that feels indulgent but is actually packed with vegetables. Instead of traditional tomato sauce, roasted butternut squash gets blended into a creamy, slightly sweet “sauce” that pairs perfectly with broccolini, red onion, and melty mozzarella.

It’s cozy, colorful, and an easy way to get more veggies onto pizza night. The butternut squash “sauce” also won’t give you heartburn! LOL!

Healthy-ish tip: Don’t worry about making the squash sauce perfectly smooth. A little texture makes this pizza even better.

Ingredients

4 tablespoons SOOC Pizza Olive Oil
1 pizza dough, store-bought or homemade
2 cups cubed butternut squash
1 bunch broccolini, chopped
½ of a red onion, thinly sliced
1 ball fresh mozzarella, sliced
Salt and pepper

Directions

Roast the butternut squash at 425°F with 2 tablespoons SOOC pizza olive oil, salt, and pepper for about 20–25 minutes, until soft. Blend until smooth, adding another tablespoons of SOOC pizza olive oil to create a spreadable sauce.

Stretch your pizza dough onto a baking sheet or pizza stone and bake for 5-8 minutes. Spread with the butternut squash sauce. Top with broccolini, red onion, and mozzarella.

Bake at 450–475°F for about 12–15 minutes, or until the crust is golden and the cheese is bubbly. Finish with the last tablespoon SOOC pizza olive oil, a sprinkle of red pepper flakes if you’re feeling fancy.
