2 tablespoons SOOC chipotle olive oil
3-4 cups cooked shredded chicken
1 cup salsa Verde
1 small onion, diced
1 cup green chilis
1 bag tortilla chips
3-4 cups shredded cheese (Monterey jack, pepperjack, or a blend of cheddar)
1 can black beans, drained and rinsed
2 cups corn
1 cup black olives, sliced
Jalapeño slices, salsa, sour cream all optional
Heat oven to 400 degrees. Grab a parchment lined sheet pan and dump tortillas onto it.
In a pan over medium heat, toss the olive oil with onion and green chilis. Add the shredded chicken and cook until hot.
Start to layer up your chips by sprinkling cheese onto them, black beans, corn, and chicken mixture. Top with more cheese and any additional toppings you would like. Bake 10-15 minutes until the cheese is melted and bubbly.
