Simple Italian Sausage Soup

This Italian sausage pasta soup is giving Progresso rotini nostalgia…but with Italian sausage and without the ingredient list that reads like a science experiment. It’s cozy and satisfying and you can throw it together in between classes, meetings, or life happening.

Ingredients

4 tablespoons SOOC Butter Olive Oil
4-5 Italian sausages, uncased
2 tablespoons garlic, minced
1 medium onion, chopped
1 (28 ounce) can crushed fire roasted tomatoes
1 can diced tomatoes
4 cups beef broth
1 tablespoon dried oregano
1 tablespoon Italian seasoning
1 teaspoon crushed red pepper
2 cups uncooked fusilli pasta
salt and pepper

Directions

Grab a pot and add your oil, onions, and sausage. Sauté over medium to high heat until sausage is starting to brown. Drain any excess fat from pot.

Stir in garlic and add oregano, Italian seasoning, and crushed red paper and cook for another minute.

Add in your crushed tomatoes and broth and bring to a boil. Add the dried pasta and reduce the heat and simmer till pasta is cooked. Serve hot. Note: Some brands of crushed tomatoes are thicker so add more beef broth if needed.
