Ground Beef Stroganoff with Mushrooms

The dinner you make when you’re tired but still want something good.

This is not fancy stroganoff. This is an I’ve been up since 4am and cannot sleep anymore and before you know it dinner time is here already. The kind you make when you open the fridge, see ground beef, and immediately feel relieved. It’s cozy, creamy, and wildly dependable. No weird ingredients. No tiny bowls. Just one pan, a wooden spoon, and something warm to dump it over.

This is the meal that makes everyone quiet for a minute.
That’s how you know it’s good.

Ingredients

2 tablespoons SOOC Tuscan Herb Olive Oil
1 pound of ground beef, cooked and drained
4-6 cups mushrooms, cubed (or more-no one’s mad about it)
1 cup onion, chopped
2 tablespoons garlic, minced
2 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard (optional)
1 teaspoon soy sauce
1 cup sour cream
1 cup milk
1 bunch fresh parsley
1 tablespoon SOOC Tuscan Salt
2 tablespoons pepper

Directions

Preheat deep pan over medium-high heat with olive oil. Add the ground beef and cook until no longer pink. Drain grease and set aside.

Add more olive oil into your pot. Add onions and minced garlic and cook for a few minutes. Add in mushrooms, soy sauce, Worcestershire sauce, mustard, salt and some pepper. Cook through and let juices evaporate.

Add in beef broth, milk, and beef to the pot again. Turn the heat to low and let simmer for about five minutes.

Remove from the heat and add in sour cream. Stir to combine everything together and season to taste if needed. Serve over noodles, rice, or potatoes or eat just by itself! It’s just that good!
