For the Dressing:
2 tbsp SOOC Bacon Olive Oil
2 tbsp SOOC Maple Bourbon Balsamic Vinegar
1 tbsp garlic, minced
1 tbsp Dijon mustard
1 tbsp honey or maple syrup
Salt and black pepper, to taste

For the Salad:
1 box baby spinach
1 lb bacon, cooked and crumbled
2 cups cherry tomatoes, halved
2 avocados, diced
2 cups fresh mozzarella balls, drained
4 hard-boiled eggs, peeled and quartered
1. Cook bacon in a skillet until crispy, then transfer to a paper towel-lined plate.
2. In a small bowl or mason jar, whisk together dressing ingredients.
3. Combine spinach, bacon, tomatoes, avocado, mozzarella, and eggs in a large bowl. Drizzle with dressing and toss gently. Serve immediately.
