Ingredients

6 cups carrots, peeled and grated
2 cups golden raisins
2 cups peanuts
1 small red onion, chopped
1 cup SOOC Persian Lime olive oil
2 tablespoons honey
1 tablespoon garlic, minced
Juice from 2 limes
2 teaspoons ground cumin
Small bunch of green onions, thinly sliced

Directions

1. In a large bowl, toss together carrots, raisins, peanuts, red onion, and green onions.

2. In a small bowl, whisk together olive oil, honey, lime juice, garlic, and cumin. Pour dressing over carrots and toss to coat.
