2–3 tbsp SOOC Butter Olive Oil
2 cups marinated artichoke hearts, drained and chopped
1 yellow onion, diced
4 cups fresh spinach, chopped (or frozen, thawed, and drained)
2 cups crumbled feta cheese
8 eggs
1 cup milk
Salt and black pepper, to taste
1. Preheat oven to 375°F. Grease a pie dish or baking dish.
2. Heat olive oil in a skillet over medium heat. Sauté onion for 5 minutes, then add spinach and artichokes. Cook for another 5 minutes. Remove from heat.
3. In a large bowl, whisk eggs, milk, salt, and pepper. Add the sautéed vegetables and feta cheese. Mix well.
4. Pour the mixture into the prepared dish. Bake for 30–40 minutes, until the quiche is set and golden on top. Cool for 10 minutes before serving.
