Sausage, Asparagus, Mushroom and Burrata Pasta

Sausage, asparagus, mushrooms, and burrata come together in a simple, seasonal pasta dish. The sausage adds spice, the mushrooms bring earthiness, asparagus gives a fresh bite, and the burrata finishes it all with rich, creamy texture.

Ingredients

2 pounds spicy Italian sausage
4 tablespoons SOOC Basil olive oil
1 bunch thin asparagus, trimmed and cut into 1-inch pieces
4 cups sliced mushrooms (I used 2 cups baby Bellas and 2 cups white.)
1 box pasta
8 oz burrata, plus more to top with if desired
Salt and pepper

Directions

1. Boil hot water and cook pasta according to package. Set aside. Turn oven onto 400 degrees.

2. Grab a parchment lined sheet pan and toss asparagus, mushrooms, olive oil, salt and pepper together and roast for 20 minutes.

3. While vegetables are roasting cook sausage and drain. Set aside.

4. Grab a large bowl and pour pasta into it. Cover with cooked sausage, roasted vegetables, and top with burrata. Mix all together and top with more olive oil. Top with more burrata if desired.
