For the Chicken:
4 medium bone-in chicken thighs (about 1 ½ lbs)
Salt and black pepper, to taste
2 tbsp SOOC Olive Oil
2 medium apples, peeled and sliced
2 cups fresh cranberries

For the Maple Glaze:
1 tbsp olive oil
1 garlic clove, minced
3 tbsp SOOC Apple Balsamic Vinegar
¼ cup maple syrup
Salt and pepper, to taste
1. Preheat the oven to 400°F. Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear chicken for 5–8 minutes per side until golden brown.
2. Add apples and cranberries to the skillet. Roast in the oven for 25–30 minutes until chicken is cooked through and apples are tender.
3. For the glaze, heat olive oil in a small pan. Sauté garlic, then add balsamic, syrup, salt, and pepper. Simmer for 5 minutes until thickened.
4. Drizzle the glaze over the chicken and roast for an additional 5 minutes. Serve hot.
