Ingredients
Ingredients for Salad:
1 roasted chicken, shredded
3 cups English cucumbers, sliced
3 cups frozen corn or fresh corn (about 2 ears)
2 avocados, diced
Bunch of chives, minced
Ingredients for the Dressing:
1 cup SOOC Milanese Gremolata Olive Oil
½ cup SOOC Honey Ginger Balsamic
2 tablespoons honey
1 tablespoon Dijon mustard
1 teaspoon SOOC Garlic Medley Sea Salt
1 teaspoon cracked black pepper
Directions
On a cutting board, shred roasted chicken and slice and dice cucumbers, corn, avocados, and chives then add to a medium bowl
In a mason jar with a tight lid or a small bowl, mix SOOC Milanese Gremolata Olive Oil, SOOC Honey Ginger Balsamic, honey, mustard, SOOC Garlic Medley Sea Salt, and cracked pepper. Shake or mix until emulsified.
Pour the dressing over chicken mixture in medium bowl and mix well. Refrigeratae and serve cold.
