Peach Salsa

Fresh peach salsa is a refreshing appetizer, Side Dishes, or topping. This easy homemade peach salsa recipe combines fresh, juicy peaches, ripe, cherry tomatoes, tangy red onion, fresh corn right off the cobb, spicy jalapenos, lime juice, Tuscan herb olive oil, peach balsamic and salt and pepper for a fruity, spicy, tasty dip that will be a hit at any event!

It’s an absolute breeze to put together. Dice up all the ingredients, add them to a bowl, and stir to combine! In tenish minutes, you’ll have a zesty, refreshing salsa that’s perfect for scooping up with tortilla chips, piling onto tacos, grilled fish and more.

I’m a huge fan of this peach salsa recipe as it’s written, but it’s great with all sorts of variations, too! Feel free to put your own spin on it. Here are a few ideas to get you started:

  • Go all-in on the fruit - Make a peach and mango salsa by replacing half the peaches with diced ripe mango. Pineapple, nectarines, and/or strawberries would be delicious additions too!
  • Add extra crunch - Toss in a handful or two of chopped cucumber.
  • Make it heartier - For a more substantial salsa, mix in a cup of black beans or chick peas.
  • Turn up the heat - Stir in a dash of chili powder or red pepper flakes for an extra kick.
  • Toss in peppers – Feel free to add peppers of any color alongside the peaches in this fresh fruit salsa.

Products used: Tuscan Herb Olive Oil, Peach Balsamic Vinegar

Ingredients

1 teaspoon SOCC Tuscan Herb Olive Oil
1 tablespoon SOCC Peach Balsamic Vinegar
4 fresh peaches sliced and diced
2 cups mixed cherry and grape tomatoes, quartered or diced
1-2 ears of corn, cooked and removed from the cob or 2 cups frozen corn kernels
1 red medium onion, diced
1 jalapeño, seeded and minced
½ bunch fresh parsley, minced
1 teaspoon chili powder
Juice from 1 lime
Salt and pepper

Directions

1. Grab a medium sized bowl and add the peaches and all the other ingredients. Stir and add the lime juice, olive oil and balsamic vinegar.

2. Mix all together, chill in the refrigerator at least one hour before serving and serve with tortilla chips.

Variations:

- For an extra kick of heat, add a dash of hot sauce and more jalapeño seeds.

- Add diced avocado for creaminess and additional texture.

- If peaches are not in season, canned peaches are perfectly permissible when making peach salsa, but be sure to drain it well before adding it to the salsa.

- It’s also a great topper for grilled fish, chicken or scallops and can also be used on tacos or in quesadillas.
