Quickie White Bean Dip

This is a delicious white bean dip that is infused with garlic, some spices and topped with an infused pepperoncini olive oil. You can throw this one together in under 10 minutes for a fabulous appetizer. This can be served with bagel chips, crackers, vegetables or even slather it onto bread to upgrade your sandwich game and/or thrown on top of bowls. It can be made smooth or left chunky. This easy recipe is over the top delicious!

Products used: Garlic Olive Oil

Ingredients

2 cans cannellini beans, drained and rinsed (You can reserve a few for the top of the dip if desired.)
4 tablespoons garlic, minced
1/2 cup SOOC Olive Oil (I used garlic infused but if you want it extra spicy use the pepperoncini olive oil!)
4 tablespoons SOOC Pepperoncini Olive Oil for the top
2 teaspoons garlic salt
2 teaspoons freshly ground black pepper
Optional Herbs:
2 tablespoons fresh (or dried) basil
2 tablespoons fresh (or dried) rosemary

Directions

1. Add the beans, olive oil and spices into your food processor or blender and blend until you get your perfect consistency for the way you prefer your dips.

2. Add a few beans, more salt and pepper to the top of the dip.

3. Drizzle with pepperoncini olive oil before serving.

Other Topper Ideas:

- Add shredded cheese or crumbled feta on top and bake at 400 degrees until the cheese has melted. Drizzle with more olive oil and serve warm.

Add chopped green and/or black olives, crisped prosciutto crumbles and/or roasted peppers on top.
