Sheet Pan Honey Ginger Chicken

Ingredients

For the Chicken:
4 bone-in, skin-on chicken thighs
½ cup SOOC Sesame oil
½ cup SOOC Honey Ginger Balsamic Vinegar
2 tablespoons garlic, minced
2 tablespoons Dijon mustard
½ cup honey
2 tablespoons dried oregano
Salt and pepper to taste

For the Vegetables:
5 carrots, peeled and chopped
2 yellow squash, sliced
3 cups mini potatoes
3 cups broccoli florets
2 tablespoons SOOC Sesame oil
2 tablespoons SOOC Honey Ginger Balsamic Vinegar
Salt and pepper to taste

Directions

1. Marinate chicken for at least 30 minutes (or overnight if possible).

2. Preheat oven to 425°F. Toss vegetables with olive oil, salt, and pepper, then spread on a baking sheet.

3. Place marinated chicken on top and bake for 35-45 minutes until chicken reaches 165°F.
