Summer Strawberry and Prosciutto Salad

This is my kind of “healthy-ish”—balanced, intentional, and satisfying. The strawberries add just enough freshness, but the real focus is on quality ingredients that do something for your body: peppery greens, protein-rich prosciutto, and a hit of good fat from cheese to keep you full. It’s simple, elevated, and built the same way I approach movement—strong, supportive, and never just for show. Perfect for when you want to feel good, eat well, and not overthink it.

Ingredients

Ingredients for Salad:
1 head of romaine or 6-8 cups mixed greens
4 cups strawberries, cleaned and sliced
2 cups mozzarella balls, halved
8-10 pieces of prosciutto
2-3 mini cucumbers, peeled and chopped
1 avocado, chopped
1-2 cups pistachio nuts, peeled and chopped
Ingredients for Salad Dressing:
1 cup SOOC Basil Olive Oil
2 tablespoons SOOC Strawberry Balsamic
1 tablespoon Dijon mustard
1 tablespoon honey
salt and pepper

Directions

In a large bowl, layer lettuce, strawberries, mozzarella, prosciutto, cucumbers, avocado and pistachios.

Use a mason jar with a tight lid or a bowl and mix SOOC Basil Olive Oil, SOOC Strawberry Balsamic, mustard, honey, salt and pepper. Shake until blended. If too thick, add more olive oil.

Top salad with dressing, toss and serve.
