1. What are chicken cutlets?

Chicken cutlets are chicken breasts cut in half horizontally to make two thinner pieces, cooking much faster than traditional chicken breasts. If cutlets are not readily available, you can use chicken breasts cut in half horizontally and pounded to 1/4-inch thickness between 2 layers of plastic wrap (using a meat mallet or rolling pin).

2. Can I use a different kind of cheese?

Chicken parmesan is typically made with mozzarella cheese, but provolone will also work very well here.

3. Can I use Italian style (pre-seasoned) breadcrumbs?

Panko breadcrumbs is recommended for maximum crispness, but Italian style breadcrumbs can be used instead, skipping the Parmesan as most pre-seasoned breadcrumbs already include this.

Ingredients

6 chicken cutlets
4 tablespoons SOOC Basil olive oil
6 cups cherry tomatoes
3 tablespoons garlic, minced
1 tablespoon dried oregano
1 tablespoon red pepper flakes
6 slices fresh mozzarella
1 cup all-purpose flour
3 eggs, beaten
2 cups Panko breadcrumbs
Salt and pepper
Fresh basil leaves

Directions

1. Preheat oven to 400 degrees and line a baking sheet with parchment paper.

2. In a medium bowl, combine tomatoes, garlic, oregano, ½ tablespoon red pepper flakes, olive oil, salt and pepper.

3. Season chicken with salt and pepper, to taste. Working one at a time, toss chicken in flour, dip into eggs, then cover with Panko breadcrumb and parmesan mix. Place chicken in a single layer onto the prepared baking sheet.

4. Place into oven and bake for 10 minutes. Take out and place tomato mixture in a single layer around the chicken on the prepared baking sheet.

5. Place into oven and bake until the chicken is cooked through, and tomatoes have burst, an additional 15 minutes. Top chicken with fresh mozzarella during the last 10 minutes of cooking time.

6. Serve immediately, garnished with basil and last ½ tablespoon of pepper flakes, if desired.
