Ingredients

For the Burgers
1 tablespoon SOOC Milanese Gremolata Olive Oil
1 tablespoon SOOC Sicilian Lemon Balsamic
1 ½ - 2 pounds ground turkey
1 cup fresh spinach, chopped
1 cup sun dried tomatoes, chopped
½ cup feta, crumbled
½ cup red onion, minced
2 tablespoons garlic, minced
2 eggs
1 tablespoon dried oregano
Salt and pepper
Bibb lettuce leaves, buns, sliced red onion, cucumber, tomato, optional toppings

For the Tzatziki Sauce
1 cup Greek yogurt
½ cucumber (grated and drained of excess water)
1 tablespoon SOOC Milanese Gremolata Olive Oil
1 tablespoon SOOC Sicilian Lemon Balsamic
1 tablespoon garlic, minced
1 tablespoon fresh dill, chopped
Salt and pepper to taste

Directions

Tzatziki Sauce

1. Grate the cucumber, then squeeze out excess moisture using a paper towel.

2. In a bowl, mix Greek yogurt, olive oil, balsamic, garlic, dill, salt, and pepper. Stir in the grated cucumber and mix until well combined.

Chill for at least 15 minutes before serving and putting onto the burgers.

Burgers

1. In a large bowl combine the ground turkey, spinach, sun dried tomatoes, feta, and red onion. Add in balsamic, garlic, dried oregano, salt, pepper and eggs and mix everything together with your hands to combine.

2. Heat a pan over medium heat and add olive oil. Place the hand shaped burgers into the hot pan and cook on each side for about 5 minutes.

3. Slather burgers with tzatziki sauce and red onion and serve on buns or bun less in the bibb lettuce leaves. Add more cucumber, tomatoes, and/or salt and pepper.
