Ingredients

3 tablespoons SOOC Fernleaf Dill olive oil
4 cups cooked, shredded chicken (rotisserie works great!)
1 onion, diced
2 tablespoons garlic, minced
2 tablespoons Italian seasonings
2 cups celery stalks, chopped
2 cups carrots, chopped
8 cups chicken broth, more if needed
2 cups milk
2 cups pearled couscous
Lemon juice from 2 lemons
Salt and pepper

Directions

1. Grab a large pot and heat at medium heat. Add olive oil, onion, garlic, celery, and carrots. Cook for 5-8 minutes. Add in the Italian seasonings and chicken.

2. Add in the broth, lemon juice, and couscous. Let simmer for 10-15 minutes.

3. Add in the milk, salt and pepper and more lemon juice to taste. Top with fresh dill and add more pepper for more spice.
