Easy Greek Pasta Salad

Just because summer is winding down doesn’t mean we have to say goodbye to bright, fresh flavors. A Greek pasta salad is the perfect dish to bridge the seasons—light enough for warm afternoons, yet hearty enough for cooler evenings. 

It’s also a great make-ahead dish, so you can prep it on Sunday and enjoy it for quick lunches or easy dinners all week. Pair it with grilled chicken, fish, or simply enjoy a big bowl on its own. Fresh, simple, and satisfying—this is a recipe worth keeping in rotation long after summer fades.

Ingredients

1 box of pasta
2 cups cherry tomatoes, halved
2 cups cucumber, chopped
2 cups kalamata olives, pitted and halved
1 red onion, sliced
1 block of feta, cubed – also crumbled feta is fine!
1 cup SOOC Herbes De Provence Olive Oil
1 tablespoon dried oregano
½ cup white vinegar
Salt and pepper

Directions

Cook pasta, drain and set aside. In a large bowl make your dressing by adding olive oil, vinegar, oregano, salt and pepper. Mix everything together.

Add pasta into the bowl. Top with tomatoes, cucumbers, olives, onion, and feta cheese.

Mix all together and serve right away. Top with more olive oil and feta cheese if desired.
