Grilled Chicken Skewers with Peach Chutney

Ingredients

Chicken:
3 large boneless, skinless chicken breasts
1/4 SOOC Tuscan Herb Olive oil
Juice from 1 lemon
1 Tablespoon Dijon mustard
1 tsp salt
Peach Chutney:
1 pound of peaches, peeled and diced
2/3 cup brown sugar
1/3 cup SOOC Peach Balsamic Vinegar
1 small onion chopped
1 Tablespoon fresh ginger, minced
1 teaspoon chili flakes
1/2 teaspoon ground cinnamon

Directions

Cut chicken into chunks and place into bowl or plastic bag. Add the olive oil, lemon, mustard and salt and let sit for an hour or overnight.

While chicken is marinating put peaches, brown sugar, balsamic, onion, ginger, chili flakes, and ground cinnamon into a pot over medium heat. Bring to a boil and simmer for 1 hour.

When chicken is done marinating put pieces onto skewers and grill over medium heat until cooked through. Serve right away with peach chutney or serve at room temperature.
