Ingredients

1 box of pasta
2 tablespoons SOOC Garlic olive oil
1 can pumpkin puree
1 onion, finely diced
2 tablespoons garlic, minced
1 cup vodka
1 (6oz.) can tomato paste
2 cups heavy cream
2 cups pasta water
1 cup parmesan cheese to mix into sauce and extra to sprinkle on top

Directions

Cook pasta, drain, and set aside. Reserve 2 cups of pasta water before draining.

Heat olive oil and add in onion and garlic. Sauté for 5-8 minutes. Add in tomato paste and cook for 2-3 minutes.

Add in vodka and pumpkin puree and mix well. Add in heavy cream, pasta water, and parmesan cheese and stir and cook 5-7 minutes until sauce thickens.

Toss in cooked pasta and mix. Top with more parmesan cheese if desired.
