Ground Turkey Mexican-ish Skillet ๐ŸŒฎ๐Ÿฅ”๐Ÿฆƒ

Sometimes you need a quick, flavorful, and hearty dinner that comes together in one panโ€”and this Ground Turkey Mexican-ish Skillet is just that! Packed with lean protein, fiber-rich black beans, sweet corn, and a burst of fresh scallions, this dish is the perfect weeknight plan.
The best part? Itโ€™s ready in under 30 minutes, and cleanup is a breeze! Also heats up nicely for leftovers.ย 

Ingredients

1 pound ground turkey
2 tablespoons SOOC Persian Lime olive oil
4 tablespoons taco seasoning
1 sweet potato, peeled and cubed
1 can of black beans, drained and rinsed
3-4 cups of shredded cheddar
2 ears of corn, cooked and cut off the cob or 2 cups frozen or 1 can
1 white onion, chopped
4-6 scallions, chopped
2 tablespoons garlic, minced
Salsa and sour cream to top

Directions

Heat olive oil in skillet. Cook onion and garlic. Add in ground turkey and drain. Add in taco seasoning and mix in.

Grab a parchment lined baking sheet and toss sweet potato cubes with the olive oil. Bake for 20-25 minutes or until cooked.

Add cooked sweet potatoes, black beans, corn and cheese into skillet. Place in the oven at 400 degrees for 10-15 minutes or until cheese is melted.

Serve hot with your favorite toppings like sour cream, extra salsa, avocado, or tortilla chips.
