Easy Sheet Pan Salmon for Two

Sheet pan dinners are my favorite thing to make after a long day of work. They come together in minutes and are so versatile with whatever seasonal produce you can find. All you need is a sheet pan and some parchment paper and you’ll have dinner in no time. The best part is there’s only one sheet pan to wash at the end!

I used asparagus, baby Bella mushrooms and red onion as my sides for this meal, but you can swap them out for your choice of veggies! Green beans, broccoli, purple cauliflower, potatoes, or zucchini would all be great options. The veggies get the perfect char, and the salmon comes out juicy and flakey with so much flavor.

Products used: Tuscan Herb Olive Oil, Five Pepper Sea Salt

Ingredients

1 cup SOOC Tuscan Herb Olive Oil
1 tablespoon SOOC Five Pepper Sea Salt
1 tablespoon fresh cracked black pepper
1 filet of salmon, sliced into two pieces
1 red onion, chopped
4 cups baby Bella mushrooms, quartered
1 small bundle of thin asparagus, chopped

Directions

1. Heat oven to 400 degrees. On a parchment lined sheet pan place the salmon, asparagus, baby Bella mushrooms and red onion.

2. Toss to coat all the vegetables and salmon filet with olive oil, salt, and pepper.

3. Bake for 15-25 minutes or until vegetables are tender and salmon is not raw. Serve immediately. Add more salt, pepper, and olive oil if desired.
