Ingredients for the Pesto:
3 cups packed fresh basil leaves
1 cup grated Parmesan cheese
½ cup SOOC Pesto Olive Oil
¼ cup pine nuts
2 tablespoons garlic, minced

Ingredients for the Pizza:
1 cup pesto
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1 cup mushrooms, thinly sliced
4-6 slices of prosciutto, torn
More SOOC Pesto Olive Oil, for drizzling
Fresh cracked pepper
Directions
1. Heat your oven to 400 degrees. Dump basil, Parmesan, olive oil, pine nuts and garlic into your blender or food processor. Blend until smooth.
2. Drizzle a parchment-lined baking sheet with some more SOOC Pesto Olive Oil. Roll out the pizza dough on a floured surface into a circle or rectangle getting it as thin as you can. Lift the dough and place it on the baking sheet.
3. Layer the pesto, ricotta, mushrooms, shredded mozzarella, and prosciutto. Bake until the crust is golden brown and the cheese is bubbling for 15-20 minutes. Add more pesto if desired and drizzle more SOOC Pesto Olive Oil on top and add some fresh pepper.
