Products used: Milanese Gremolata Olive Oil

Ingredients

3-4 zucchini, trimmed and cut into pieces
2 tablespoons garlic, minced
4 tablespoons SOOC Milanese Gremolata Olive Oil, plus more for serving
1 cup fresh basil
1 teaspoon black pepper
2 tablespoons lemon juice

Other Idea: For an extra kick of flavor, add a pinch of red pepper flakes to the dip. You can also try experimenting with different seasonings, such as smoked paprika or basil.

Directions

1. Preheat oven to 400 degrees. On a parchment lined baking sheet, toss zucchini with 2 tablespoons olive oil, and toss to coat. Roast for 30 minutes.

2. In a blender or food processor add the roasted zucchini, garlic, 2 tablespoons olive oil, black pepper, and lemon juice. Pulse to blend until mixture is reduced and velvety. Add salt, more lemon juice and/or olive oil to taste and consistency.

3. Spoon into a bowl and serve with veggies and crackers.
