Healthier Pasta Fagioli Soup

This healthy Pasta Fagioli is the perfect comfort food without the guilt! It’s filling, nutritious, and easy to make for a weeknight meal or meal prep.

Pasta Fagioli, a traditional Italian soup, is typically made with pasta, beans, vegetables, and sometimes ground meat. To make a healthier version, I’m using lean ground turkey instead of higher-fat proteins. This version is packed with nutrients, lower in saturated fat, and just as flavorful as the classic!

Ingredients

3 tablespoons SOOC Pepperoncino & Garlic olive oil
1 onion, diced
2 tablespoons garlic, minced
2 tablespoons red wine vinegar
1 pound ground turkey
2 tablespoons Italian seasoning
2 cups celery, chopped
2 cups carrots, chopped
8 cups chicken broth (more if needed)
2 cans (15 oz) crushed tomatoes
2 cans (15 oz) cannellini beans (not drained)
3-4 cups dry pasta
Parmesan cheese for topping (optional)

Directions

1. Heat a large pot over medium heat. Add 1 tablespoon olive oil and ground turkey. Cook, drain, and set aside.

2. Add the remaining olive oil, onion, garlic, celery, and carrots. Cook for 5-8 minutes. Stir in Italian seasoning and red wine vinegar.

3. Pour in the broth and beans and simmer for 20 minutes.

4. Add the pasta and cook until tender. Alternatively, cook pasta separately and add it when serving to prevent sogginess.

5. Season with salt, pepper, and more vinegar to taste. Top with Parmesan cheese and red pepper flakes if desired.
