Summer Salad with Strawberry Basil Vinaigrette
Salads in the summer are simply incredible because they are full of fresh ingredients & can be served cold as a nice cool down meal to beat the heat. Salads are great as a Side Dishes, but also easily made into a meal with some protein added on top like chicken, shrimp, or steak.

Products used: Strawberry Balsamic Vinegar, Basil Olive Oil

Ingredients

Ingredients for the Salad:
10 cups mixed greens and spinach
2 cups strawberries, halved
12-15 large shrimp, cooked and seasoned with SOOC Basil Olive Oil and a handful of fresh basil, minced
1 cup feta, crumbled
1 cup pumpkin seeds
1 cup pistachios, shelled

Ingredients for the Dressing:
2 cups strawberries, halved
1 large handful of fresh basil
2 tablespoons SOOC Strawberry Balsamic Vinegar
¾ cup SOOC Basil Olive Oil
salt and pepper
lemon juice from 2 lemons

Directions

1. Add all the ingredients for the dressing into a blender or food processor and blend until smooth.

2. In a pan over medium heat add olive oil and shrimp. Cook 2-3 minutes on each side and sprinkle each side with fresh basil.

3. Add spinach and lettuce to a large bowl. Layer on the strawberries, feta, shrimp, nuts & pumpkin seeds. Toss with dressing and enjoy.
