1 store-bought pie crust
2–3 tbsp SOOC Garlic Olive Oil
1 large sweet potato, peeled and cubed
1 yellow onion, diced
1 bunch thin asparagus, trimmed and chopped
2 cups Swiss cheese, shredded
8 eggs
1 cup milk
Salt and black pepper, to taste
1. Preheat oven to 400°F. Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a parchment-lined baking sheet and roast until tender, about 20 minutes. Set aside. Reduce oven to 375°F.
2. Blind bake the pie crust for 10–12 minutes. Let cool.
3. Heat 1 tbsp olive oil in a skillet over medium heat. Sauté onions and asparagus for 8–10 minutes until softened. Remove from heat.
4. Whisk eggs, milk, salt, and pepper in a bowl. Layer roasted sweet potatoes, onions, and asparagus in the crust. Sprinkle with Swiss cheese. Pour egg mixture over the filling.
5. Bake for 30–40 minutes until the filling is set and golden. Cool for 10 minutes before serving.
