Recipe by Barbara Braidwood
Products used: Blood Orange Olive Oil
1 ⅔ cups All-purpose Flour
1 tsp Baking Soda
¼ tsp ground Cinnamon
½ tsp Salt
½ cup Sugar
2 Eggs
½ cup SOOC Blood Orange Olive Oil
4 Bananas, very ripe and mashed
2 Tbsps Sour Cream
1 tsp Vanilla Extract
⅔ cup Walnuts, toasted and chopped
1 cup Chocolate Chips (optional)
Set oven to 350°F. Grease the bottom and sides of a loaf pan with a little bit of Blood Orange Olive Oil
In a small bowl, prepare the dry ingredients - sift together the flour, baking soda, cinnamon and salt.
In a mixing bowl, beat sugar and eggs with a whisk until light and fluffy, about 10 minutes. Drizzle in Blood Orange Olive Oil. Add mashed bananas, sour cream and vanilla extract.
Fold in dry ingredients, walnuts and chocolate chips, if using. Pour into greased loaf pan and bake in preheated oven for about 45 minutes to 1 hour.
Allow to cool completely before slicing and enjoy!
