Chipotle Shrimp and Asparagus Kabobs

Skewers are one of my favorite things to cook on the grill, they are super simple to prepare and incredibly versatile. You can also prepare these ahead of time and throw on the grill when guests or family arrive in no time at all.

Shrimp and asparagus both cook very quickly, making them a perfect pair on the grill. These Shrimp and asparagus skewers are a lighter alternative to the beef skewers. I normally grill asparagus separately but found that the pieces would not only look prettier but also compliment the other fresh flavors. Try to use thicker asparagus stalks for easier skewering. The shrimp and asparagus are coated in a chipotle and garlic marinade which keeps the flavors spicy and fresh.

Products used: Chipotle Olive Oil

Ingredients

1 cup Chipotle SOOC Olive Oil
2 tablespoons garlic, minced
1 tablespoon red chili powder
Salt and pepper
15 large shrimp, deveined
1 pound asparagus, the thicker it is the easier to skew but harder to chew

Directions

1. Take the shrimp, olive oil, garlic and red chili powder and place in a bowl. Take the asparagus and cut into 1–2-inch pieces and place in another bowl. Toss asparagus to coat with more olive oil, garlic, and red chili powder. Cover and marinate shrimp and asparagus for 2 hours or overnight for best flavor.

2. Preheat grill to medium heat. Thread the shrimp and asparagus alternately onto the five skewers, dividing evenly among the skewers.

3. Grill each side of skewers for 2-3 minutes, until the shrimp are bright pink and just cooked through and the asparagus is tender. Serve hot.
