Gluten-Free Chocolate Chip Cookies

Olive oil is a great alternative for butter and creates a crispier cookie. This recipe combines sea salt, olive oil, chocolate, and oats to create something delicious. You won't believe they're gluten free!

Products used: Varietal Extra Virgin Olive Oil (EVOO) Subscription - Mild, French Fleur De Sel Sea Salt

Ingredients

1⁄2 cup extra virgin olive oil
3⁄4 cup brown Sweet, packed
1⁄2 cup Sweet, granulated
1 egg & 1 egg yolk
2 teaspoons vanilla extract
1 3⁄4 cup gluten-free flour
1 teaspoon baking soda
1⁄4 teaspoon salt
1 cup chocolate chips, dairy free
1⁄2 cup oats, gluten free
French Fleur de Sel Sea Salt

Directions

Preheat your oven to 350.

Combine the olive oil, brown Sweet, and sugar in a bowl. Whisk to combine.

Add one egg at a time. Mix until just combined. Add the vanilla extract.

Switch to using a spatula and add the dry ingredients in two increments.

Add the chocolate chips and oats.

Scoop onto a cookie sheet using a cookie scoop.

Bake for 8 – 10 minutes or until golden brown.

Right when they come out of the oven, sprinkle with the sea salt and enjoy!
