Ingredients
½ lb Snow Peas, trimmed
6 cups Mixed Salad Greens
4 Scallions, thinly sliced
2 small Zucchinis, ribbon sliced with veggie peeler
¼ cup torn Basil leaves
4 Tbsp SOOC Honey Ginger Balsamic
6 Tbsp SOOC Varietal Extra Virgin Olive Oil
1 tsp fresh Lemon juice
SOOC Himalayan Sea Salt, to taste
Fresh grated Pepper, to taste
Directions
Blanch snow peas in boiling water for 3 mins. Toss into ice bath and then drain.
Toss snow peas with greens, zucchini, scallions, and basil.
Whisk Honey Ginger Balsamic and the Extra Virgin Olive Oil with lemon juice, Himalayan Sea Salt, and pepper.
Divide salad onto plates, dress each salad.
