½ cup SOOC Basil Olive Oil
⅓ cup SOOC Sicilian Lemon Balsamic Vinegar
Zest of 1 lemon
1 Tbsp of minced Shallots
3 Tbsp of Basil, finely chopped
1 small clove of Garlic, minced
¼ tsp Sicilian Sea Salt
Black pepper, to taste
6 cups fresh Spinach
3 oz of crumbled Goat Cheese
⅓ cup Sun Dried Tomatoes (not packed in oil), sliced thin
3 Tbsp toasted Pine Nuts
In a medium bowl, combine the SOOC Basil Olive Oil, SOOC Sicilian Lemon Balsamic, lemon zest, shallots, basil, garlic, Sicilian Sea Salt, and pepper. Whisk until combined.
Toss the spinach, goat cheese, sun dried tomatoes, and pine nuts in a large salad serving bowl.
Dress with vinaigrette, and serve!
