Street Corn Guacamole
Combining two favorite Mexican appetizers into one! Classic guacamole dressed up with roasted corn, queso fresco cheese, and chili powder, this appetizer is sweet and salty, spicy and savory, and just straight-up delicious! Recipe by: Taylor MacDougall

Products used: Garlic Olive Oil, Lime Sea Salt


4 Avocados, cubed
½ small Red Onion, minced
½ cup Cilantro, minced
1 cup Grape Tomatoes, quartered
½ small Jalapeño, minced
2 Tbsp SOOC Garlic Olive Oil
½ Lime, juiced
¼ tsp SOOC Lime Sea Salt
½ cup roasted Corn
⅓ cup Queso Fresco Cheese, crumbled
¼ tsp Chili Powder


In a medium sized serving bowl, combine the avocado, red onion, cilantro, grape tomatoes, jalapeño, Garlic Olive Oil, lime juice, and Lime Sea Salt. Toss gently to combine, you do not want to smash the avocado.

In a small bowl, toss together the roasted corn, queso fresco, and chili powder. Spoon on top of the avocado mixture. Serve immediately!
