16 ounces grape tomatoes, halved
1⁄2 cucumber, sliced
2 avocadoes, diced
1⁄2 cup red onion, diced
8 ounces pearl mozzarella
1⁄2 teaspoon lemon juice
2 tablespoons SOOC Tuscan Herb Olive OIl
1⁄2 teaspoon Garlic Rosemary SOOC Sea Salt
1⁄2 teaspoon freshly-ground pepper
Begin by cutting your vegetables.
Cut the grape tomatoes in half and put in a mixing bowl.
Slice the cucumber and add to the mixing bowl.
Dice the avocadoes and red onion, then add to the bowl. Add your lemon juice to the bowl.
Add the mozzarella to the vegetable mixture.
Drizzle the olive oil over ingredients and top with the sea salt and pepper.
