Mandarin and Goat Cheese Spinach Salad

  • 2 tsp SOOC Persian Lime Olive Oil
  • 6 Tbsp SOOC Pomegranate Balsamic Vinegar
  • 2 tsp Dijon Mustard
  • 2 tsp Honey
  • 2 Tbsp sliced Almonds, toasted
  • 2 Mandarin Oranges, sectioned and halved
  • 2 oz Goat Cheese
  • 2 Tbsp dried Cranberries
  • 1 large bag or box of Baby Spinach

Products used: Persian Lime Olive Oil , Pomegranate Balsamic Vinegar


  • To make dressing: Combine Pomegranate Balsamic, Persian Lime Olive Oil, mustard, and honey in a bowl and whisk until well mixed.
  • Put remaining ingredients in a large salad bowl. Pour dressing over salad. Toss lightly before serving.
