Mandarin and Goat Cheese Spinach Salad

Products used: Persian Lime Olive Oil, Pomegranate Balsamic Vinegar

Ingredients

2 tsp SOOC Persian Lime Olive Oil
6 Tbsp SOOC Pomegranate Balsamic Vinegar
2 tsp Dijon Mustard
2 tsp Honey
2 Tbsp sliced Almonds, toasted
2 Mandarin Oranges, sectioned and halved
2 oz Goat Cheese
2 Tbsp dried Cranberries
1 large bag or box of Baby Spinach

Directions

To make dressing: Combine Pomegranate Balsamic, Persian Lime Olive Oil, mustard, and honey in a bowl and whisk until well mixed.

Put remaining ingredients in a large salad bowl. Pour dressing over salad. Toss lightly before serving.
