Sicilian Lemon Salsa Verde


This sauce is the perfect, bright and flavorful accompaniment to a grilled, roasted, or seared fish! Also wonderful on vegetables or used to brighten grilled, poached, or roasted meats.

  • ½ cup Gherkin Pickles
  • 1 Garlic clove
  • ¼ cup Capers
  • 2 Anchovy Filets
  • 1 bunch of Parsley
  • 1 bunch of Basil
  • 4 sprigs of plucked Mint leaves
  • 4 Tbsp SOOC Sicilian Lemon Balsamic
  • ½ cup + 8 Tbsp SOOC Mild Extra Virgin Olive Oil
  • 1 tsp SOOC Sicilian Sea Salt

  • In a food processor, puree gherkins, capers, garlic, and anchovies.
  • Add the Sicilian Lemon Balsamic, ½ cup Extra Virgin Olive Oil, and the fresh herbs. Season with Sicilian Sea Salt. Continue to puree until more oil is needed.
  • Slowly pour additional Extra Virgin Olive Oil to the food processor, until the sauce has a smooth consistency. Spoon over grilled or baked seafood, grilled meats, or vegetables, and enjoy!
