Ingredients
½ cup Gherkin Pickles
1 Garlic clove
¼ cup Capers
2 Anchovy Filets
1 bunch of Parsley
1 bunch of Basil
4 sprigs of plucked Mint leaves
4 Tbsp SOOC Sicilian Lemon Balsamic
½ cup + 8 Tbsp SOOC Mild Extra Virgin Olive Oil
1 tsp SOOC Sicilian Sea Salt
Directions
In a food processor, puree gherkins, capers, garlic, and anchovies.
Add the Sicilian Lemon Balsamic, ½ cup Extra Virgin Olive Oil, and the fresh herbs. Season with Sicilian Sea Salt. Continue to puree until more oil is needed.
Slowly pour additional Extra Virgin Olive Oil to the food processor, until the sauce has a smooth consistency. Spoon over grilled or baked seafood, grilled meats, or vegetables, and enjoy!
