Ingredients

Ingredients for the Steak:
1 ½ pounds sliced flank steak
2 tablespoons SOOC Persian Lime Olive Oil, more if desired
1 cup SOOC Apple Balsamic Vinegar
2 tablespoons red wine vinegar
1 tablespoon dried thyme
1 tablespoon Dijon mustard
2 tablespoons, garlic minced
Fresh cracked pepper
6-8 corn tortillas

Ingredients for the Slaw:
1 tablespoon SOOC Persian Lime Olive Oil
2 tablespoons SOOC Apple Balsamic Vinegar
2 tablespoons white vinegar
Salt and pepper
4 cups red cabbage, sliced
1 honey crisp apple, matchstick-sized pieces

Directions

1. To marinate the steak, in a medium bowl add the olive oil, apple balsamic vinegar, red wine vinegar, dried thyme, Dijon mustard, salt, and pepper. Add the steak and toss to fully coat. Marinate overnight or at least 30 minutes tossing occasionally so the steak gets an even coat of marinade.

2. To make the slaw, in a medium bowl mix together the olive oil, vinegar, and salt and pepper. Add in the red cabbage and apples and toss to coat.

3. If your grill is away for the season heat a pan over high heat, add the steak, and cook 2-4 minutes on each side until cooked to your liking.

4. Once the meat and cabbage are ready, heat your tortillas on medium heat in a pan or in the microwave, wrapped with a paper towel to get them warm. Add the steak and slaw onto each tortilla and sprinkle with cheese or some other favorite taco toppings. Serve and eat while hot!
