Raspberry Chipotle Glazed Chicken

We combined our Raspberry Balsamic Vinegar with our Chipotle Olive Oil to create a flavorful Raspberry Chipotle glaze for chicken. These are perfect on top of a salad or served alone with a green vegetable and a side salad.

Products used: Spicy Food Lover, Chipotle Olive Oil & Raspberry Balsamic, Raspberry Balsamic Vinegar, Chipotle Olive Oil


Chicken Breasts
Salt & Pepper (to taste)
3 Tablespoons SOOC Chipotle Olive Oil
1 cup Onion, chopped
¾ cup SOOC Raspberry Balsamic Vinegar
¼ cup Raspberry Preserves
3 Tablespoons fresh Basil


Season the chicken breasts with salt and pepper.

In a saucepan, heat 2 tablespoons of Chipotle Olive Oil. Add the chicken to the pan and cook for 4 minutes on each side, until cooked throughout.

Remove the chicken and add the onions with the last tablespoon of Chipotle Olive Oil. Cook until the onions are transparent.

Combine the Raspberry Balsamic Vinegar and raspberry preserves together. Pour in the pan with the onions. Simmer for 3 – 4 minutes until thick.

Add the chicken back in the pan and cook until it reaches 165 degrees throughout.

Serve and enjoy!
